The Peppers Cookbook by Jean Andrews. Jean Andrews, author of "Peppers, The Domesticated Capsicums" my favorite book has now authored this one. I haven't seen it yet, but am sure it will, like all of her others, be super.
The Hot Book of Chillies by David Floyd. I found this in the Las Cruces New Mexico library when we were checking it out. I sent an e-mail to myself saying "List this Book!" While I don't agree with the spelling of Chiles, It has great detail on varieties and great recipes.
The Peppers Cookbook by Jean Andrews. Andrews is the author of "Peppers, The Domesticated Capsicums", probably the best book on Chiles. I have not read this new one, but am ordering it.
Texas Peppers, The Jalapeno Cookbook by Peggy Struble. This nice little book contains over 100 recipes that use Jalapeno Peppers. Most of them are easy to prepare and don't require a lot of ingredients. There is also a pepper heat scale and a list of Texas Jalapeno Festivals.
Vegetables Every Day by Jack Bishop. This excellent book was found at the library. While it doesn't specialize in peppers, it has quite a few recipes for roasted peppers and every other veggie you can imagine. We love the wilted spinach with garlic and hot pepper flakes.
The Pepper Trail: History and Recipes From Around the World by Jean Andrews. This book traces the history of the chile as it makes it's way around the world after being discovered by Columbus in 1492.
Peppers, The Domesticated Capsicums, New Edition by Jean Andrews. If we could only have one book, this would be it. Carefully researched and with an extensive bibliography, Ms. Andrews book traces the history of the pepper from pre-Columbian times to the present. The book contains beautiful drawings, detailed descriptions, and excellent recipes. Expensive, but well worth the price. Originally published in 1984, completely updated in 1995.
Peppers: Vegetable & Spice Capsicums (Crop Production in Horticulture Series) by Paul L. Bosland and E. J. Votava. Released in March of 2000. This is a text for advanced students and serious growers. Dr. Bosland is a Professor at New Mexico State University and an acknowledged expert on peppers. He writes a column in Chile Pepper Magazine. The Table of Contents can be viewed at Amazon.com.
The Chile Pepper Encyclopedia by Dave DeWitt. Just released in April of 1999. "Everything you'll ever need to know about hot peppers, with more than 100 recipes." Paperback. Dave is one of our favorite chile writers and is the former editor of Chile Pepper Magazine. A link to Dave's Firey Foods Magazine is available. The Pepper Lady's Pocket Pepper Primer by Jean Andrews. A brand new release from the University of Texas press. If Pepper, The Domesticated Capsicums is too expensive, this is the next (MUST HAVE) book for you. Excellent photos and text. This will help you to identify and use the 42 varieties of peppers, both fresh and dried which are commonly available in North American markets.
The Pepper Garden by Dave De Witt and Paul Bosland. Dr. Bosland is a professor at New Mexico State University. He specializes in the breeding and growing of Chile Peppers and is a world reknowned expert. The best how to do it pepper growing book so far.
The Great Chile Book by Mark Miller. This book is an expansion of the Great Chile Posters with more Pepper photos and great descriptions from the founder of the Coyote Cafe. Has pictures of over 90 fresh (Fresco) and dried (Seco) Chiles with heat scales. It also contains background information and some recipes. Probably tied for 2nd place of all time favorites with Dave Dewitt and Nancy Gerlach's Whole Chile Pepper Book. If you are going to cook with Chiles. you must have this book!
The Great Salsa Book by Mark Miller. This book is a follow up to The Great Chile book listed above. 64 recipes and full color throughout.
Salsa Lovers Cook Book by Susan Bollin. This inexpensive book contains more than 180 salsa recipes.
The Hot Sauce Bible by Dave De Witt and Chuck Evans. This book contains information on more than 1500 hot sauces from around the world. It includes more than 175 recipes for making and using hot sauces. Included are recipes for salsas, chutneys, ketchups, curries and pastes.
The Habanero Cookbookby Dave DeWitt & Nancy Gerlach. So you grew all these great Habaneros. Now what are you going to do with them? Read this one and find out.
Moveable Harvests, The Simplicity & Bounty of Container Gardens by Chuck with Barbara Crandall. A good book for folks who have small spaces to garden in. Good photos including pests which prey on peppers.
Great Bowls of Fire by DeWitt, Longacre & Frank. 75 recipes for soups, chili, stews and other one pot meals.
Peppers: A Story of Hot Pursuits by Amal Naj. This Wall Street Journal reporter takes us on a tour of the world in search of the Chile Pepper. Included is a trip to Bolivia where the Chile is believed to have originated. This book had been out of print but now has been re-issued in paperback. The book is worth a lot more than the price! A Must Have for any Chile Afacionado.
The Carefree Cook's Lighter Side of the Southwestby Margot Gilmore Ziemer. Margot is a member of the Chile-heads WWW Group. When she sent a note asking me to review her book, I said I would, but I forwarned her that I hate recipes that require hundreds of ingredients in tiny amounts. None of hers do. She has some excellent recipes from beverages to desserts, many new and unique. She also has good descriptions of Chiles, beers and a list of sources which I hope will include the Tough Love Chile Co. in the next edition. A best buy!
The Whole Chile Pepper Book With over 180 Hot and Spicy Recipes by Nancy Gerlach and Dave DeWitt. This book has great photos, historical information, and Chile recipes from all over the world. Like Mark Miller's book, it has a Chile Heat Scale.
Eat the Heat by Jonas Borssen. This book was first published in Sweden in 1996 and is in it's 3rd printing there. It has now been published in the United States in 1998. Being of Swedish descent, I can't think of a group of people who need this kind of cookbook more. Over 300 recipes.
Peppers of the World by Dave DeWitt and Paul Bosland. This book is basically a Chile identification guide with color photographs of over 300 Chiles, many of which don't even have names. The infamous Red Savina Habanero is shown on page 83.
Hot Spots by Dave DeWitt, the former editor of Chile Pepper Magazine, contains recipes from America's celebrated fiery food restaurants. It contains recipes from K-Pauls in New Orleans to Mark Miller's Coyote Cafe to the East Coast Grill in Cambridge Mass. Amazon.com has the second edition (1995) available by special order only. We have reviewed the 1st edition (1992).
The Tabasco Cookbook: 125 Years of America's Favorite Pepper Sauce by Paul McIlhenney with Barbara Hunter. I imagine that Paul who owns the company contributed but that Barbara did the work. I am not a Tabasco Sauce fan and the only sauce I've heard raves about is the Tabasco Habanero which isn't being marketed in Nevada. I haven't read this book, but Tabasco seeds are part of our "Hot Hot Hot Collection" which is our most popular seed collection. red hot and green by Janet Hazen. This vegetarian cook book contains recipes for spicy dishes using not only chiles but peppercorns, mustards, horseradish and ginger. If you're not a vegetarian, just add meat.
Men's Guide to Bread Machine Baking by Jeffery Gerlach, husband of Dave Witt's co-author, Nancy Gerlach. Gerlach is the owner of Southwest Trading Company in Albuquerque, New Mexico and knows a thing or two about Chiles. Recipes include Jalapeno Cheese Bread, Double Corn Chile Bread, Spicy Cornmeal Bread, Red Chile Bread and Chile Cheese Bacon Bread. A Christmas gift from my daughter, it contains over a hundred recipes. Not just for men, but a great gift for anyone who has a bread machine. Recipes are given for 1 and 1 1/2 lb. loaves.
Rodale's Garden Answers, Vegetables, Fruits and Herbs, At-a-Glance Solutions for Every Gardening Problem For those of you who are interested in organic gardening, this is the book. Has extensive information on Peppers and Tomatoes and information on how to combat disease and pests without using chemicals.
Heat Zone GardeningEdited by Cathey, Cathey and Bellamy, this new book from Time-Life Books tells you how to get the most out of plants in your region of the US. Nice color photos of many species.
Pepper Diseases: A Field Guide will take you to the ordering form for the Asian Vegetable Research and Development Center in Taiwan. This neat little 98 page book written in several languages is a must for any pepper grower. Postage for the first 100 grams is included in the price, so just add postage for another 20 grams to your part of the world. It took about 3 weeks to receive it here in the United States.
